Caramel-Kissed Upside-Down Apple Cookies
Thin Honeycrisp apple fans caramelize in brown sugar and butter at the bottom of a muffin tin, then get covered with a simple vanilla-cinnamon cookie dough. Flip the pan while the cookies are still warm so the glossy fruit lands on top. They look bakery-fancy but come together with everyday pantry staples and no mixer required beyond a bowl and spoon.

Instructions
- 1Preheat the oven to 350°F. Generously grease a 12-cup standard muffin tin with 2 tablespoons of the butter.
- 2In a small bowl, toss the apple slices with 2 tablespoons of the brown sugar and 1/2 teaspoon of the cinnamon.
- 3Arrange 4 to 5 overlapping apple slices in a tight fan in the bottom of each muffin cup. Sprinkle any leftover sugar-cinnamon mix over the fruit.
- 4In a mixing bowl, beat the remaining 6 tablespoons butter with the remaining brown sugar and the granulated sugar until creamy, about 2 minutes.
- 5Beat in the egg and vanilla. Stir in the flour, baking powder, salt, and remaining 1/2 teaspoon cinnamon just until a soft dough forms.
- 6Divide the dough among the cups (about 1 1/2 tablespoons each) and gently press it over the apples so they are fully covered.
- 7Bake 14 to 16 minutes, until the cookie tops are golden and a toothpick inserted into the dough comes out clean.
- 8Cool in the pan 5 minutes, then run a thin knife around each cookie and invert the pan onto a wire rack. Lift any stuck apple slices onto the cookies.
- 9Serve warm or at room temperature.
