Instructions

  1. 1Preheat the oven to 400°F. Cook the bacon in a skillet over medium heat until crisp, about 8 minutes; drain on paper towels, crumble, and set aside. Grease a 9x13-inch baking dish.
  2. 2Toss the potatoes with 2 tablespoons olive oil, half of the ranch seasoning, and the black pepper. Spread in the baking dish and roast for 20 minutes, until the edges start to brown.
  3. 3In a bowl, toss the chicken with the remaining 1 tablespoon olive oil and the remaining ranch seasoning. Stir in the sour cream until coated, then fold in the broccoli.
  4. 4Remove the potatoes from the oven. Spread the chicken and broccoli over the potatoes, tucking pieces into the gaps so the pan is fairly even.
  5. 5Sprinkle 1 cup of the cheddar over the top. Bake 22 to 25 minutes, until the chicken reaches 165°F and the potatoes are fork-tender.
  6. 6Scatter the remaining 1/2 cup cheddar and the crumbled bacon over the casserole. Bake 4 to 5 minutes more, until the cheese is melted.
  7. 7Let rest 5 minutes, garnish with green onions, and serve hot.
