Pizza-Stuffed Mini Pumpkin Snack-O'-Lanterns

Hollowed mini sugar pumpkins become edible jack-o'-lanterns packed with pizza sauce, mozzarella, pepperoni, and bell pepper. They bake until the pumpkin walls turn tender and the filling bubbles, so you can eat the shell like a personal pizza bowl. A festive, original Halloween snack for home cooks.

Instructions

  1. 1Preheat the oven to 375°F and line a rimmed baking sheet with parchment paper.
  2. 2Slice a thin lid from the top of each pumpkin and scoop out seeds and strings, leaving walls about 1/2 inch thick. Optionally carve small jack-o'-lantern faces, keeping openings modest so filling stays inside.
  3. 3Brush pumpkin interiors and lids with 1 tablespoon olive oil. Sprinkle the insides with kosher salt and garlic powder.
  4. 4In a mixing bowl, stir together pizza sauce, mozzarella, chopped pepperoni, diced bell pepper, Italian seasoning, and the remaining 1 tablespoon olive oil.
  5. 5Spoon the filling into each pumpkin, packing it in. Sprinkle Parmesan over the tops. Set pumpkins and lids (cut side up) on the baking sheet without covering the pumpkins yet.
  6. 6Bake 25 minutes. Set the lids on the pumpkins and bake 10 to 15 minutes more, until a fork easily pierces the pumpkin flesh and the cheese is melted and bubbling.
  7. 7Rest 5 minutes, then serve warm. Eat the tender pumpkin shell along with the pizza filling.
